Grilled Corn and Avacado Relish

Grilled corn, avocados, fresh lime and cilantro dressing, a little dash of balsamic vinegar, cayenne pepper…O La La….Incredible explosion of flavors…Right!! Great amalgamation of sweet and salty, tangy and spicy..Key is to grill the corn as the charcoal flavor adds so much to the entire dish. The smoky flavors ahem ahem…

This is a wonderful relish and goes well with plain tortilla chips or with grilled chicken or baked salmon or as taco fillings or cheesy egg omelet or fritata….A whole list of items or best can be had just the way it is 🙂

With baked salmon, grilled corn adds crunch while the avocado enhances the buttery flavors. I use the leftovers sometimes with toasted breads, cheese spread layered with this and then some tortilla chips to make a crunchy munchy sandwich!

I also make a great main meal if by putting this relish on a bed of shredded lettuce and add grilled chicken on top, with some feta cheese….Oh I can go on and on with it…

Remember to make this just before serving for best texture and flavors. Last time when I made these, I hardly had any leftovers…It’s hard to stop sometime, we just gobbled it up without knowing that we finished a whole bowl of it.

2 Ear fresh corn, grilled ( Spray cooking oil and grill the corns)
1 Avocado, halved, pit removed, peeled and diced into small pieces
1 Tbsp Olive Oil
2 Tbsp Lime juice
1 Garlic cloves
1 Tsp Cayenne pepper
1 Tbsp Cilantro/ Coriander, finely chopped
Salt and Crushed Black Pepper as per taste
Dash of Balsamic Vinegar

Smash the garlic clove, sprinkle with a pinch of salt and with the flat side of a large knife, mash and smear the mixture into a coarse paste.
Mix this garlic paste, lime juice, cayenne pepper, cilantro, salt and black pepper together in a bowl.
Now gradually whisk in the olive oil. Set aside

Remove the corn kernels from the cob using serrated knife.
Add in the cut avocado and mix the dressing.
Add in a dash of balsamic vinegar to bring all the flavors together and a sweetness to it.

Your wonder relish is ready..serve it as it is or with any dish..let your imagination go wild!
