Peas and Mint Quinoa Pulao

Pulao/Pilaf is a flavorful rice dish prepared by cooking rice/basmati rice with whole spices and various vegetables.  A one pot meal in any Indian household for those days when one wants to make something filling, quick and hassle free. Just have it with plain yoghurt or raita ( yoghurt, veggies and spices) and you have a complete meal.

Generally I make peas pulao/ matar wale chawal, a very popular dish among the punjabis. I still remember how in my childhood days we used to look forward to winter season to make these with fresh peas. The flavors and aroma of fresh peas, divine :-).

Of late, have been making loads of Quinoa, as it is gluten free, low in fat, rich in fiber and a good source of protein. Replacing the regular basmati rice with quinoa is just a start of incorporating healthy ingredients into our diet. So tonight instead of making the regular peas pulao, I substituted the same with qunioa and made peas mint pulao. My mom makes yummy peas mint pulao, so here I have just recreated her recipe using quinoa. And must say that Quinoa carries the delicious flavors of whole spices, mint and aromatic sweet peas.

1 Cup Qunioa
1 1/2 Cup Water
2″ Cinnamon Stick
2 Green Cardamom
1 Black Cardamom
3-4 Whole Black Peppercorn
2-3 Cloves
1 Dry Red Chili
2 Green Chili, slit lengthwise
1 Cup Peas ( Fresh/ Frozen)
2-3 Tbsp Fresh Mint, roughly chopped
1 Onion, thinly sliced
1 Tbsp Cumin seeds
1/2 Tsp Kashmiri Red Chili Powder
3/4 Tsp Garam Masala Powder
2 Tbsp Vegetable Oil
Salt to taste

In a pan bring water to boil and add quinoa. Let it boil and then cook covered for 12-15 mins till its done.
Let it rest covered and then fluff with fork.
In a wok, heat oil, add the whole spices ( cinnamon, dry red chili, cardamoms, cloves, pepper corn) and saute for 30-40 secs.
Add the cumin seeds, saute for few seconds, Add the onion slices and green chili and cook till onions get translucent.
Add the peas, mint, salt, red chili powder and garam masala. Add the quinoa and mix well.
Serve warm with yoghurt/raita.
